The Miracle of Rotisserie Chicken

This weekend I took a trip with friends to the mecca of bulk food: Costco. And as you’ve bought it before mom, I bought myself a rotisserie chicken (among other things!) Yesterday, I ate it warm, just sliced up, with some frozen broccoli. But today I improvised and made healthy chicken salad (using the same sour cream & greek yogurt substitute for mayo that I did for the Healthy Potato Salad) and it was pretty divine!

Start with your cold rotisserie chicken, tear it up, put it in a bowl:

Then add some chopped up walnuts, red grapes, sliced in half, red onion, finely diced, celery thinly sliced, and apple also thinly sliced.

Yum! Now put everything in a bowl and mix it up!

Now, instead of mayo, mix up some 3 parts sour cream to 2 parts Greek yogurt. A little salt, a little pepper and voila! Healthy chicken salad!

I stuck it in half a pit pocket, and it was a very nice, light dinner! And I have enough left over for lunch tomorrow!! Woohoo!!
