On a stormy Friday night, I decided to go light with a delicious tuna salad – Linda style! So simple – albacore tuna, with black olives, sweet yellow tomatoes, chick peas, marinated artichoke hearts, white onion, salt, pepper, fresh parsley and a drizzle of my famous home made dressing. This is such a perfect Friday night meal when you do not have the energy to cook, want something light but satisfying and something with a ton of flavor! Enjoy!
