I love the magical, fantastic, versatile food that are chia seeds. And I’ve tried out many recipes to find just the right pudding. So I continued on my quest to find the perfect chia seed breakfast recipe. I love these mason jar chia-seed recipes because they are so easy to make the night before and super portable for work!
Today’s edition of my love affair with chia seeds includes a very ripe banana, peanut butter, dark chocolate peanut butter, honey, almond milk, and of course chia seeds!
Begin by tossing the ripe banana, 1/3 cup of almond milk, 1/4 cup regular peanut butter and 1/4 cup chocolate peanut butter in your blender (or in my case, my trusty magic bullet!) and blend away!
Once you blended that all up, add 1 1/2 tbsp chia seeds, a drizzle of honey, and the rest of the vanilla extract (there was <1/8 tsp left…)
Mix thoroughly. Then, if you’re me, realize that it’s going to be too thin so make a last minute decision to add 1/4 cup plain greek yogurt.
Shake it like a polaroid picture, pop it in the fridge and voila! Banana-chocolate-peanut butter-chia seed pudding!
