Well, ma, we are absolutely rubbish at keeping up a blog. It’s been around a month since my last update – but to be fair, it’s been a very busy month!
Tonight I cooked in my kitchen for the first time in a loooong time. And, I tried something new – beets! I also made an old favorite – spaghetti squash! Although, I think it’s not in season anymore because it wasn’t the best spaghetti squash I’ve had…
I got beets from one of my office mate’s farm share – she was away on vacation and let the rest of us in the office split her farm share!
Look how weird! I boiled the beets for ~30 min until I could poke them with a fork. Then I peeled off the skin – which was simultaneously easy and not at all – and cut them up, sprinkled a little salt, and voila! They were like candy!!
I also made spaghetti squash, which I have made a million times before. (I think I made it for the first time in this post). So I won’t really talk about the spaghetti squash.
But beets are wild – they have rings like trees, and dye your fingers bright fuchsia!

My fingers are clean now, but not without much effort haha!
Like I said, they were so sweet like candy or something – deeeelish!! Then I threw some spaghetti squash on the plate, topped it off with a little asiago/romano/parmesean cheese combo.
