Back in the Saddle Again!

Have you ever been so in the dark about yourself and then one day you get a major wake up call forcing you to look at the truth? Well, Mel, that’s what happened to your mom today! Here I was, representing my organization at a Health Fair, and a picture was innocently taken of me, and I saw it a few hours later on FB. I couldn’t believe what I saw! A very overweight version of me! When I look in the mirror, this is not the image I see, and the camera saw something very different. I have to admit, I have not been eating very healthy and need to get back on track. I will use this as an opportunity to start working toward a healthy weight and kick-up the activity factor. I just want to say, why does this always happen right before a holiday!!! Oh well, c’est la vie! Listen, I love to cook and I love healthy foods, so I will embrace the change. I also clearly remember how good I felt when my weight was down, my energy was up, and my brain wasn’t foggy. The FitBit is going back on and all of the white, floury, sugary things are coming off my daily intake. The only white things I will consume are daikons, cauliflower, mushrooms, and tofu! I won’t lie, I realized before seeing the photo that I had been in denial for a while and upon that realization, started picking out healthier choices at the market. At my last visit I picked up sweet potatoes, asparagus, mushrooms, tofu, purple cauliflower, avocados, spinach, and Ezekiel 7-grain sprouted muffins. I’ll use those for avocado toast for breakfast. Another factor for me is skipping meals. When I don’t eat all day, I binge at night, so I’ll have to work on that! Yesterday, I had a one pan sauté of sweet potatoes, enoki and cremini mushrooms, asparagus, and tofu, sautéed in coconut oil. It was delicious and satisfying!

Today, I sautéed some sweet potatoes and asparagus in coconut oil and added two eggs over easy on top. I sprinkled them with salt, pepper, and turmeric. Delicious! I used turmeric and coconut oil because the latter is a medium-chained fatty acid and both are supposed to be good for brain health! Oh, and they also taste good! Here are some pictures!
