There’s nothing like a protein packed breakfast!

This morning I used the leftover sockeye salmon and the roasted asparagus with shallots to create a protein packed delicious egg creation. It’s always satisfying and a great budget stretcher when you can use the leftovers from the night before to make tomorrow’s breakfast or lunch! The best part is that it is transformed into a whole new meal, so it doesn’t feel like you are eating the same thing all over again!
