Mojo Chicken Madness

Have you ever had something so good that you lick the plate? I know, I know terrible manners. If it makes you feel better mom, I scraped the plate… but then I might have licked it.

So all I did was bake some chicken. What made this chicken plate-licking good? This stuff

photo 1 (28)Taino’s Mojo. SHAM-WOW is this stuff delicious. It’s olive oil with a bunch of deliciousness backed inside – onions, garlic, peppers, lime, cilantro… It is, as the website says “liquid gold”. I picked it up at the farmers market the other day, and ate it with a little whole wheat roll (shhhhh carbs only count for half on church days…). It is AMAZING. It smells so good, it tastes so good, and apparently it  makes your chicken unbelievably good. Remember that time I thought I made the best chicken ever? Well, this might have been better. Plus I was really super hungry.

Anyway, start by slicing up half an onion and one clove of garlic. Put them in the bottom of a glass baking pan and get our your chicken tenderloins.

Place chicken on top of this. Splash some lemon juice on top. Put a little salt and pepper on chicken, then the magical, mystical Mojo. Spoon the good stuff on then drizzle some extra oil on everything.

Bake at 425 degrees for about a half hour. For the first twenty five minutes, keep a foil tent on top then take it off for last five.

Try not to get burny stuff, but if you do – don’t fret! It’s still delicious.

This was seriously so flavorful and the chicken stayed super moist. Plus, I have two leftover for lunch tomorrow 🙂

So just as a forewarning, I will be away for a wedding this week, so any food posted is going to be tagged with “healthy eating”…. NOT. I’m going to be in the south so basically I’m suspending any thoughts of eating healthy (although I’m still going to try to avoid white carbs as much as I can and I don’t ever eat junky food anymore). Expect a long blog post that will completely negate our attempts at health conscious dinner, and get prepared for some serious food envy.
