Ma, the title today is a reference from the movie Groundhog Day, which I think is one of *the* stupidest holidays. I do think we talked about this on the phone this morning, actually. But, on the plus side, today I got a snow day, and my first day of full relaxation in a month, truly.
So one thing I did was make coconut chocolate chip cookies. Why coconut? Because I had coconut flakes and thought that using coconut oil as a substitute for butter would be nice.
So here’s what I used
- 1 bag (almost full) chocolate chips
- The rest of my coconut flakes (maybe 1/4 cup?)
- 1 cup brown sugar, slightly packed
- 1/2 cup coconut oil, softened
- 2 tsp baking powder
- 1 3/4 cup flour
- 2 eggs
- 2 tbsp vanilla extract
So begin by creaming the sugar & coconut oil. Add in the 2 eggs, at room temp, and once that’s fluffy, the vanilla extract. Slowly mix in the flour and baking powder with a wooden spoon. Add the chocolate chips and coconut, then drop dough on cookie tray with parchment paper down.
Bake them at 375 for 8 minutes, or until the edges get a little brown. Make sure to eat one while they’re still warm and gooey, because that’s the beeeeest.
Coconut, like lemon, is another flavor/food that I used to abhor, and then something changed and now I can’t get enough! Taste buds are weird…
So now I am off to read Inherent Vice because the movie is coming out and I swore off doing any kind of work today! Ma, I hope you enjoyed your Groundhog Day, cause mine was deeeelish.
