Well, it’s clearly been a week since I posted – I did make two very good dinners this week, so I’m just going to post my meals from Monday, Thursday, and yesterday, today! And then maybe I’ll make something tonight (I have some spaghetti squash and tofu… comments and suggestions are welcome…
So Monday night I needed something quick because I had a TON of work to do. So out of the freezer came some Trader Giotto’s (Trader Joe’s, you’re so clever becoming and Italian chef) goat cheese and sun-dried tomato ravioli! YUM. And I had some frozen broccoli so I just steamed some of that and voila! A delicious meal.
No recipes for this one – just buy, boil some water, take out of the freezer, put in water, enjoy!
And, since I was lucky enough to write this with my handy-dandy time machine, I can tell you about my Tuesday lunch leftovers which included some ravioli, broccoli, cottage cheese, chia seed pudding, and I think that’s it!
