Stir-Fry or How I Learned to Stop Worrying and Use Every Vegetable I Could Find…

Yesterday, I went crazy. I wanted to eat a zillion things all at once because it was the first beautiful day (today being the second) and I wanted zucchini and mushrooms and shallots and onions and it just got out of control.

And since I’m not really at a phase in my life where the best way to prepare any meal is stick it in a big pan and saute it, I figured I’d stick with what I know and call that a success. But my stir fry last night was particularly simple and colorful, so I’ll give it a 10/10.

Things put into stir-fry: 

  • 3 Shallots
  • 1 clove of Garlic
  • 1/4 Red Onion (I know, I know, shallots are onions. So I only put a little bit of red onion, to mix up the color and taste)
  • 1 Zucchini
  • 2 little potatoes
  • Spinach
  • Tofu
  • 3 Mushrooms (I actually forget which kind I got… they started with a “C”…?)

I don’t think it’s necessary to do a step-by-step. Just add things in order of how cooked you need each thing to be (I.e., garlic onions first, spinach last, etc.) You don’t want super over done tofu or barely cooked potatoes!

And the only spices I put were a little salt & pepper!

Stir-fry is always a good idea

And, I went for another beach run – and in the morning this time, so I was out there quite a while! It was B-E-A-U-tiful out on the beach. But it because less of a run and more of a hike because the further you walk down the beach it gets really rocky and uneven. But awesome nonetheless!

You can only just find the horizon between the water and the sky – they’re both so blue it’s hard to distinguish between them!
