This post is a few days late but for good reasons – I’m done with my first year of grad school!!! Finals finished two days ago, then I had a bridal shower, a town Centennial Celebration, a visit with some cousins and then I slept in till 11 today!
I’ll post about our breakfast today next but first I have to post about the one successful meal I had this past week (it was mostly a week of terrible eating and ordering out) last weekend.
You read the title: It’s grillin’ time!
The meat that I cooked was actually really bad, but the vegetables were delicious, so let’s just focus on them! I started with zucchini and yellow squash and some red onions.
I drizzled some olive oil, salt, pepper, and a little Italian seasoning. Then my roommates were grilling so I split the space with them!
Then it got kind of cold and the charcoals started to die out so I got impatient and finished everything on the cast iron…
I didn’t take a picture of the final product because I was so hungry I ate as things finished…. whoops!
