Who knew cashews could become “cheesecake”?

So, the challenge with this time of the year is staying on track with a healthy eating plan through all of the barbeques, graduations, weddings, celebrations, etc. Thanks to a fellow blogger, Stephanie Eusebi, and her Guilt-free Nutella Cheesecake recipe, I was able to create a delicious alternative to the usual sugar laden, flour driven desserts. I tweaked the recipe a little bit by substituting walnuts for almonds in the crust. The outcome was better than expected. I’m certain this dessert has a very high calorie count, however, when I say that a sliver that equals about 2 to 3 forkfuls does the trick, it really does. I don’t think I could have eaten much more because this is a very rich dessert. The other bonus – it’s a frozen dessert. We decided we are going to limit our splurges to the weekend, so this is a perfect confection for those weekend indulgences and it will last a very long time!
