I forgot how much fun it is to blog! I’m so happy that I picked it up again, and now I’m on a roll! Mel, I had a very busy day at work and stayed until closing. We had a wonderful health and wellness program; however, I wasn’t being very healthful skipping meals today! When I got home, I was tired and didn’t have the energy to prepare a big meal, so I put together a light meal and will probably have a small açaí bowl a little later if I feel like a snack.
Tonight, I made a Rosey Goat cheese quesadilla! Rosey Goat is a mild goat’s milk cheese from the Castilla la Mancha region of Spain and is covered in fragrant rosemary. It is mild and creamy, yet has a mellow goat tang.
To accompany this quesadilla I made some deviled eggs. Not just any deviled eggs – truffle deviled eggs! The eggs were made in the Instant Pot…that will be another entry all on its own! One thing I will share about hard boiled eggs made in the Instant Pot – they peel like butter! The shells just slip off the eggs!
To elevate these eggs I add truffle oil to the mayonnaise and yolk mixture and sprinkle truffle flakes on the finished product. The truffles lift these eggs to elegance!
All in all it ended up being a simply delicious late night dinner! 123, Mel!
